Some amazing facts about the whole food ingredients in these good-for -your- bod- treats:

  • Dates – contain essential minerals such as calcium, iron, phosphorus, sodium, potassium, magnesium and zinc – they are also high in  dietary fiber which helps to move waste smoothly through your colon and helps prevent LDL (bad) cholesterol absorption by binding with substances containing cancer-causing chemicals- amazing.

What You Will Need:

  • 1/2 cup raw cashews
  • 1/2 cup raw sunflower seeds
  • 15 medjool dates, pitted and roughly chopped – soak in hot water if they are hard
  • ⅓ cup shredded unsweetened coconut (plus ¼ cup for rolling)
  • 1 tablespoon coconut oil
  • 1/4 cup dark chocolate chips
  • 1½ tablespoons unsweetened cocoa powder
  • pinch of salt
  • 1 tsp cinnamon
  • 1 tablespoon + 1 tsp water

 

What To Do:

  1. Put cashews & sunflower seeds in food processor and pulse until roughly combined
  2. Add remaining ingredients, turn food processor on until well mixed – could take about 3 minutes to come together into a paste and may need to spatula down sides and re blend every so often.
  3. Using a tablespoon measure, spoon out mixture and roll in balls.
  4. Coat each ball in the remaining ¼ cup shredded coconut.
  5. Place on a parchment covered baking sheet and refrigerate for at least thirty minutes, until they harden.
  6. Store in the fridge in a container or plastic bag for up to two weeks or freeze for future 3 pm, 8 pm, anytime pm craving killers!
