Vegan Egg Nog Balls

Egg nog is quite possibly the best flavor of life. It is however one of the most fattening things one can consume over the holi-yays. SO I’ve come up with these genius little nog balls that will satisfy Santa himself: Try em out and use the #leavesandbubbly on Instagram so I can see them!

What You’ll Need:

  1. 1 3/4 cup oat flour
  2. 1/4 cup coconut flour
  3. 1 scoop vanilla protein powder – vegan brown rice but use what you have
  4. 1 tbsp stevia or coconut sugar
  5. pinch of sea salt
  6. 1/2 tsp pumpkin spice
  7. 1/4 cup natural peanut butter
  8. 1/4 pure maple syrup
  9. 1/4 cup coconut egg nog ( so delicious brand looks like this )

What To Do:

  • In a large bowl, combine all the dry ingredients – set aside
  • In a smaller bowl combine maple syrup and PB and heat until liquid and combined like 30 seconds
  • Mix all the wet ingredients into the dry and mix until dough like
  • form balls with your hands and roll in sprinkles or more coconut sugar
  • Makes about 18 balls
  • Store them in the fridge and enjoy as snacks
